Fried Plantains (Tostones)-Domincan Style

Ingredients

  • 5 tablespoons oil for frying
  • 1 plantains, peeled and broken into chunks
  • 3 cups cold water
  • salt to taste

Directions

  1. Heat the oil in a large skillet. Place the plantains in the oil and fry on both sides approximately 3 1/2 minutes per side.
  2. Remove the plantains from the pan and flatten the plantains by placing a plate over the fried plantains and pressing down.
  3. Dip the plantains in water, then return them to the hot oil and fry 1 minute on each side. Salt to taste and serve immediately.

Steak with onions- Dominican Style

Time: 1.5 hrs. Serves: 4
Ingredients:
  • 4 lbs beef cut into 2 inches-wide strips
  • 4 small red onion sliced in strips
  • 4 tablespoons of oil
  • 1/2 teaspoon of mashed garlic
  • 1/2 teaspoon of ground black pepper
  • 1/2 teaspoon of vinegar
  • 1/2 teaspoon of oregano
  • Salt
Preparation:
  1. Cut the meat into strips. Sprinkle with pepper, salt and oregano and rub with the garlic,marinate for at least an hour (several hours in the fridge is best) . In a pot heat half the oil and sautee the onions until they become transparent. Add the vinegar and simmer over very low heat until all the liquid has evaporated. Remove from the pan and reserve.
  2. In the same pan add the steaks and pan fry until the meat is of your liking (this may take up to an hour). Remove the steaks from the pan and reserve. Add the onions to the pan to reheat them.
  3. Serve with white rice, a side dish (or salad) and beans.

Quick and Easy Bruschetta Recipe


Ingredients

  • 8 roma (plum) tomatoes, diced
  • 1/3 cup chopped fresh basil
  • 1/4 cup shredded Parmesan cheese
  • Garlic powder
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 loaf French bread, toasted and sliced
Directions:

  1. In a bowl, toss together the tomatoes, and basil. Mix in the balsamic vinegar, olive oil, garlic powder, salt, and pepper. Serve on toasted bread slices sprinkle Parmesan cheese on top to give it the finishing touch. Also you can add spinach dip on the bread to give a different twist!
